What's wrong with trapping this bishop?

New/learning player here. Stockfish is not a fan of my pawn B6 move and I can't quite figure out why? My reasoning at the time was that it would prevent their bishop from being active and I could later look to capture with rook A8. In the game he ended up sacrificing the bishop for a pawn which I assume is also a mistake?

Your idea of trapping the bishop is OK, only the execution was not perfect. If this was a blitz/rapid game, it is quit understandable you didn't calculate all consequences.
The problem with 18... b6 is that he can first snap off the queens and then target your c7 pawn. So:
18... b6 19. Qxd7 Bxd7 20. Rac1
If you defend by playing Rc8, then he plays 21. e5, followed by Bb7. Your rook has to move and he enters on c7 with his rook. Also, the pawn on b6 will fall. If you try 20... Bd6 instead, then Rfd1 is coming with Bxb6 to come.

So, after 18. Bxa7 it was better to play 19. Qxd1 Rfd1 20. b6
The difference is now that after Rac1 you can play Re7.
